Are you looking for a quick & easy meal to make? I’ve got a delicious meal that will take you less than 10 minutes to make! It makes a great lunch or dinner. It’s so delicious that I’d probably eat it for breakfast too!
Arugula + Truffle Flatbread
Flatbread or pita bread
Truffle & mushroom sauce (see note below)
Fresh mozzarella cheese, thinly sliced
Arugula, rinsed & dried
Preheat the oven to 375 degrees.
Smear a light coat of truffle sauce onto the flatbread or pita bread. This sauce can be very strong so remember LESS is MORE in this case.
Top with sliced mozzarella cheese (as much or as little as you want).
Place on a pan sheet and pop in the oven for 6-8 minutes, or until the cheese is melted.
When cheese is melted, remove from the oven, top with arugula and enjoy!
If you are lactose intolerant, try substituting shredded parmesan cheese for the mozzarella. Mozzarella is a soft cheese and soft cheese contains some lactose. This can cause symptoms for some individuals. Hard or aged cheeses like parmesan are low in lactose. The aging process allows the bacteria time to break down some of the lactose. So these cheese are usually better tolerated by people who are sensitive to lactose. If you make this modification, watch the baking time. Parmesan cheese won’t melt in the same way mozzarella cheese does and you definitely won’t want this dish to burn!
If you love mushrooms, you can add cooked mushrooms to the top. Sauté some sliced cremini mushrooms in a bit of olive oil and sprinkle of salt until soften. Then add to the flatbread after step 2 above.
If you eat gluten-free, try subbing your favorite GF pizza crust in this recipe. I tried to find gluten-free varieties of pita or flatbread, but didn’t have much luck. Please leave me a comment if you know of any great GF brands for these items! I did come across a recipe for homemade GF pita bread that looks doable (some of the other recipes I found looked way too complicated). I’ve had success with Nicole’s GF recipes in the past, although I’ve never tried this particular recipe.
We got our truffle sauce in Italy this summer, but you need not travel to find this delicacy! Italy was awesome so I highly recommend visiting! In the meantime, you may be able to find truffle sauce in the Italian section of your supermarket. You can also get it online. I found a few on Amazon that look similar to what we used: variety 1 and variety 2. (Please note that I haven’t personally tried either of those brands so I can’t vouch for the quality of the product.)
